“There’s a legion who appreciate the classic Aussie sparkling Shiraz, and this should delight from hello. Bold on entry with rich dark fruit flavours of blackcurrant and spiced plum, a touch of earthiness follows through, chocolate, mocha and woody spice likewise in its midst. “Fruit is from Heathcote and is matured in French and American barriques of which 25% are new for 7 months. Blackberries, boysenberries and Kalamata olive. Moroccan spices, boot leather and sarsaparilla. Vanilla bean, mulled wine and tangerine citrus peel before a hint of savoury cured meats on the finish. Sultry and luxurious, with a good slurp of sweetness but balanced well by spice and terra cotta earthiness. This is drinking well now and would be a real treat alongside slow cooked pork shoulder.” Shanteh Wale, August, 2024.
